Soft Pretzel Recipe & Tropical Traditions Review

(GIVEAWAY ENDED)
 Have you ever heard of Gold Label Virgin Coconut Oil?  I had never heard of it until I saw Tropical Traditions products on another blog. This coconut oil can be used to replace unhealthy oils used in cooking.   At first I was afraid that the oil would cause the food to have a coconut taste.  This was not the case for me when I used it in my Anna Banana bread, Sweet Peanut Butter Bread and soft pretzel recipes.  The oil does have a clean, fresh, very light coconut smell and taste. The taste and  smell didn't carry over into the food I made. No one else seemed to notice either. Click, Tropical Traditions Gold Label Virgin Coconut Oil, to learn more about the benefits of this oil.  You can also watch the very informative video, click here, “How We Discovered Virgin Coconut Oil - An Interview with Brian Shilhavy, CEO Tropical Traditions.
 I found out too, that the oil can be used as a skin softener and to help reduce the appearance of scars.   I do agree on it as a skin softener.  We had the oil on our hands to grease the bowl for our dough. I rubbed it into my hands and several hours later and many washing they are still soft but not greasy. I have a few more recipes that I will be posting using the oil!
~~~~~~~~~~~~~~~~~~~~~~~~~~~
Now on to the recipe!  I've always wanted to make homemade pretzels.  I was inspired by a recipe on the Tropical Traditions page.
Emily and I decide to make these pretzels for her Girl Scout troop.  Let me tell you friends, this was a super fun project! We had a lot of fun in the kitchen making these!  I hope that you try it, too!  We doubled the recipe.  I don't usually do this with a first time recipe but I needed quite a few for Girl Scouts and of course some for home! Do you already make pretzels??  If you have a different recipe please share!
Soft Pretzels
Preparation Time: 1 hour
 Pour water into the bowl of a standing mixer and stir in sugar and salt until dissolved. Sprinkle the yeast on top but do not stir. Allow to proof for 5-10 minutes, until the yeast begins to foam.
Add the flour and coconut oil to the yeast mixture. Using the dough hook attachment, mix on low speed until well combined. Turn the speed up and knead until the dough is smooth and pulls away from the sides of the bowl, around 4 to 5 minutes.
 Remove dough from the bowl. Oil the bowl with coconut oil and place ball of dough back in. Lightly grease the top of the dough ball. Cover the top of the bowl with a damp towel and let sit in a warm place for approximately 1-2 hours or until the dough has doubled in size. *We made a double batch so we divided the dough into 2 bowls to rise. From previous experience with bread I find that this works to not slow down the time the dough will need to double.
Preheat the oven to 450 degrees F. Stir the water and baking soda together and bring to a boil in a large pot.
Turn the dough out onto a work surface lightly oiled with extra coconut oil and divide into 10 equal pieces.We divided the dough into 12 pieces.
Roll out into pretzel shapes and place on cookie sheets lined with parchment paper and greased with coconut oil.
Place 1 pretzel at a time into the boiling water for 30 seconds. Remove with a large, flat spatula and place back unto lined cookie sheets. Brush with optional egg wash if desired.
Bake until dark golden brown in color, 12 to 14 minutes. Transfer to a cooling rack and serve with melted butter, salt, cinnamon sugar and other toppings/dips of choice.
Time to get your McDonald's Shamrock Shake!
Ok friends this is my  public service announcement to let you know that the very smooth, green, minty, magically delicious (thanks Jake and Baxter for that description) shakes are making an appearance at many McD locations!
Growing up outside of the Chicagoland area, these shakes were always available around St. Patrick's Day.  Over the years I've found it difficult to find these in certain parts of the country.  Just last year I went searching for them in Southern Illinois and could not find them!  I think it was easier to find a four-leaf clover than it was to find one of these shakes.
Last night I was taking my teen to get some fries and there was a sign on the door advertising the shake! So that is what I got!!! It tasted just as good as the shake of my youth! I wasn't sure why the last part of the shake was all vanilla. I don't think they mixed it up long enough. This same thing happened to my other teen and her friends later that night at the same store.  Just so you know it looks better all green! LOL
This little shake gave me almost 600 tasty calories! Let's just say it was worth it but I won't be stopping in to get a daily fix! I will, however, pledge to go drink another one on St. Patrick's Day!!!
*Thanks McDonald's for reading my blog post and offering me a coupon for another shake! They are also sending me some for a giveaway! I'll let you know when I post that!
U rock- That is ShamROCK!
Guest Chef Karen cooks up Potato Leek Gratin from Williams-Sonoma
 My foodie friend, Karen, is my guest chef today!  She cooks up some tasty recipes! You will see more of her post soon!  This recipe comes from one that she found on the Williams-Sonoma website.   This Potato Leek Gratin is make with two kinds of cheeses. Enjoy!
Potato Leek Gratin
Ingredients:
  • 5 Tbs. unsalted butter
  • 4 lb. leeks, white and light green portions, rinsed well, cut into 1/4-inch rings
  • 1 1/2 Tbs. kosher salt
  • 1 tsp. minced fresh thyme
  • 1/4 tsp. freshly grated nutmeg
  • 3/4 tsp. freshly ground pepper
  • 1 cup heavy cream
  • 6 oz. Gruyère cheese, grated
  • 3 oz. Parmigiano-Reggiano cheese, grated
  • 3 lb. russet potatoes, peeled, cut into 1/4-inch slices
  • 3 Tbs. minced fresh chives
Directions:
In a 12-inch nonstick fry pan over medium heat, melt 4 Tbs. of the butter. Add the leeks and salt, stirring to coat the leeks with the butter. Cover and cook, stirring occasionally, until the leeks are tender, about 20 minutes. Add the thyme, nutmeg, pepper and cream and simmer, uncovered, stirring occasionally, until thickened, about 15 minutes. Transfer to a bowl and let cool. Wipe out the pan and grease with the remaining 1 Tbs. butter.
Preheat an oven to 400ºF.
In a bowl, combine the Gruyère and Parmigiano-Reggiano cheeses. Layer one-third of the potatoes in the fry pan and spread one-third of the leek mixture on top. Sprinkle with one-third of the cheeses, then 1 Tbs. of the chives. Repeat the layering 2 more times, reserving 1 Tbs. of the chives.
Cover the pan, transfer to the oven and bake for 45 minutes. Remove the lid and continue baking until the potatoes are tender and the crust is golden brown, about 30 minutes more. Sprinkle the remaining 1 Tbs. chives on top. Let the gratin stand for 15 minutes before serving. Serves 8 to 10.
Mardi Gras fun times and yummy foods
 King Cake
We lived in New Orleans for over 5 years.  Now that I think back it wasn't a long stay.  Hurricane Katrina decided that we had stayed long enough and ushered us out the door.  Some of my best memories are of the parades, food and family fun during Mardi Gras season!  Here are a few of my pictures and recipes!  Enjoy!
King Cake
This recipe is from my guest chef, Amy! This is her Grandma's recipe for sweet yeast coffee cake. This dough is great for king cakes.  Thanks Amy and Grandma Stahlke!
Grandma Stahlke's Coffee Cake Dough (click to print)
1pkg yeast
1/4 c warm water
6 T milk, scalded and cooled
4 c. flour
1 c butter, softened
3/4 c sugar
1/4 tsp. salt
4 eggs
melted butter
2 tbs milk
Filling
1 cup confectioners sugar
1 lb cream cheese
1-2 tsp cinnamon (optional)
Icing
3 cups confectioners sugar
1 tsp vanilla
1/2 tsp almond extract (opt)
3 tbs milk
Dissolve yeast in warm water. Add milk and enough flour (about 1/2 c) to make soft dough. In another bowl combine butter, sugar, salt and eggs with mixer. Add the soft ball of yeast dough and mix thoroughly. Gradually add 2 1/2 cups of flour to make a soft dough.
Place dough in greased bowl and brush the top with butter, covering the dough with the butter. Cover with a damp cloth and let rise until doubled, about three hours.
In a large mixing bowl, combine the cream cheese and 1 cup of the confectioners sugar. Blend by hand or with an electric mixer on low speed.
Turn the dough out onto a lightly floured work surface. Gently roll it out into a rectangle about 30 inches long and 6 inches wide.
Spread the filling lengthwise over the bottom half of the dough, then flip the top half of the dough over the filling. Seal the edges, pinching the dough together. Shape the dough into a cylinder and place it on the prepared baking sheet seam side down. Shape the dough into a ring and pinch the ends together so there isn't a seam. Insert the king cake baby or pecan half into the ring from the bottom so that it is completely hidden by the dough (the cakes you get in the stores in New Orleans have the baby on top after the cake is cooled, but the tradition is to hide the baby so the person with that piece has to make the next cake and/or host the next party).
Cover the ring with plastic wrap or a clean kitchen towel and place in a warm, draft-free place. Let the dough rise until doubled in size, about 45 minutes.
Meanwhile, preheat the oven to 350F.
Brush the top of the risen cake with 2 tablespoons of milk. Bake until golden brown, 25 to 30 minutes. Remove from the oven and let cool completely on a wire rack.
Make the icing. Combine the remaining 3 tablespoons milk, the vanilla and almond, and the remaining 3 cups confectioners sugar in medium-size mixing bowl. Stir to blend well. With a rubber spatula, spread the icing evenly over the top of the cake. Sprinkle with the sugar crystals, alternating colors (purple, green and gold) around the cake. You can also substitute lemon extract for the vanilla and almond or three tbs lemon juice if you want lemon icing instead of vanilla.
An alternate filling I plan on trying this year comes from my friend Susan Buetow (ME!!! whoohoo!), who lived in New Orleans. She says this one is the closest to the traditional "plain king cake" filling. She uses 2 cups pecans that she puts in the food processor until they become a paste,1 stick of soft butter, 1 tbsp of cinnamon, 1 tsp allspice, 2-3 tsp vanilla and 1 tsp of butter flavoring, 1/2 c sugar. Process it all together and then spread it on the dough. Lightly sprinkle cinnamon over the dough before spreading the paste as your filling.
Zatarain's New Orleans Style Jambalaya Mix, 8-Ounce Boxes (Pack of 12) Fabrique Delices Andouillette (Andouille Sausages), 4-Count Links, 16-Ounce Packages (Pack of 2)
Jambalaya- If you are wanting to make a yummy quick Jambalaya buy a package of Zatarain's New Orleans Jambalaya Mix. You can't go wrong with this kit.  Follow directions on the box.  I saute up 1 chopped onion, 6 garlic cloves and 6 stalks of celery, 1 green pepper and then follow the next steps.  I add in Andouille sausage (Hillshire farms has a brand that works fine if you can't find it local) and skinless smoked sausage.  Sometimes I'll add chicken or shrimp.  When the rice is just about finished I add in a large can of Ro-Tel tomatoes.  This make a great Jambalaya.  Now if you want to cut down on the salt and processed box mix you can make your own.
Quick Jambalaya (click to print recipes)
Gumbo File Powder1 1/2 c. Uncle Ben's rice
1 can beef bouillon (get the one with out MSG)
1 large can Ro-tel tomatoes
4 green onions, sliced
1 lg onion, diced
6 cloves garlic, chopped/sliced
6 stalks celery, chopped
1 green pepper, chopped
1 T. cumin
1 T. gumbo file (found in some spice aisles)
1 stick butter
1 1/2 lbs shrimp, chicken, ham and or sausages
Saute vegetables.  Add in rest of ingredients and cook 30 minutes covered in a 350 degree oven.  Stir after 10 min.  You can also make this on the stove top.
Zatarain's New Orleans Style Red Beans & Rice, 8-Ounce Boxes (Pack of 12)
Red Beans and Rice (click to print both recipes)
You can make the Zatarain's Red Beans and Rice.  If you are wanting to make it from scratch and cut down on the sodium in the box mix I have that recipe for you, too!
Quickest Red Beans and Rice
1lb dry red kidney beans (If you can get blue runner beans these are the best to use)
2 qt. water
Tony Chachere's The Original Creole Seasoning - 8 oz1 ham bone
1 bay leaf
1/4 c. rendered bacon fat or oil
1 1/2 c. chopped onions
1 c. chopped green pepper
1 c. chopped celery
3 tsp. minced garlic
1/2 tsp. thyme
1 tsp black pepper
2 tsp creole seasoning (Love Tony Chachere's)
1 can Ro-tel tomatoes
Clean and prepare beans. Place in lg. pot. Cover with water and soak overnight or for 8 hours.  Then place beans over medium heat.  Add ham bone and bay leaf.  Bring to a slow boil and then reduce to a simmer.  Meanwhile in a large skillet, heat the rendered bacon fat or oil and add veggies.  saute until soft and stir in garlic, thyme and creole seasoning.  Cook for 2 minutes and add to simmering beans.  Continue cooking until the beans are tender, adding more water as necessary.  Remove about 1/4 c. of beans and mash them. Put back into pot.  Add in tomatoes.  Simmer about 10 min. and serve over steamed rice.  Sometimes I add the rice to the beans and mix in.  You can add andouille or smoked sausage to this too.
