Spaetzle or little dumplings

This is one of those recipes that takes a little time to make but well worth it when you sit down to eat it! I always make this with Hungarian Chicken Paprikas (click for recipe) & Hungarian Goulash (recipe coming soon.)

Spaetzle

Ingredients

3 cups flour
2 eggs
1 tsp. salt
water

Directions

Put 3 quarts or so of water in a pot with 1 teaspoon of salt. Let it come to a boil while making the dough.
Add flour, eggs and salt in a bowl. Slowly add in water to make a dough that is in between pancake batter and a stiff dough.
If you have a spaetzle maker then use that, if not you can drop the dough into the boiling water by very tiny amount using a teaspoon.
After mixing dough, water should be boiling. If so, add in the dough by teaspoon or with the spaetzle maker. When the spaetzles pop up to the surface of the water, they are done. Remove them quickly with a slotted spoon and rinse with cold water. I usually use 1/4 of the dough at a time.
